  • 2 large eggs, at room temperature
  • 12 teaspoons neutral oil (like vegetable or olive) for the skillet
  • Pinch of salt and black pepper to taste (optional)

Instructions

  1. Prep your tools and pan. Heat a non-stick skillet over medium-low heat.
  2. Blend cottage cheese and eggs until smooth. Scrape down the bowl to ensure even mixing.
  3. Optionally season the batter with salt, pepper, or herbs.
  4. Add 1 teaspoon oil to the skillet, then pour 1/4 to 1/3 cup batter, spreading into a 4–5 inch circle.
  5. Cook 3–4 minutes until the underside is light golden, then flip and cook for another 2–3 minutes.
