- 1 cup (about 225 g) cottage cheese, well-drained
- 2 large eggs, at room temperature
- 1–2 teaspoons neutral oil (like vegetable or olive) for the skillet
- Pinch of salt and black pepper to taste (optional)
- Optional: herbs, garlic powder, or grated cheese for extra flavor
Instructions
- Prep your tools and pan. Heat a non-stick skillet over medium-low heat.
- Blend cottage cheese and eggs until smooth. Scrape down the bowl to ensure even mixing.
- Optionally season the batter with salt, pepper, or herbs.
- Add 1 teaspoon oil to the skillet, then pour 1/4 to 1/3 cup batter, spreading into a 4–5 inch circle.
- Cook 3–4 minutes until the underside is light golden, then flip and cook for another 2–3 minutes.
- Remove to a plate and keep warm under a towel. Repeat to cook the rest of the batter.
Notes
For a flavorful twist, consider adding herbs or cheese to the batter. Keep flatbreads covered after cooking to maintain softness.
