Delicious and healthy Air Fryer Chicken Fajitas made with tender chicken, vibrant veggies, and wrapped in warm tortillas.


Ingredients

  • 1 lb Chicken breast or thighs (sliced thin)
  • 23 Bell peppers (red, yellow, green, sliced)
  • 1 large Onion (sliced)
  • 1 tbsp Olive oil
  • 2 tbsp Fajita seasoning mix
  • 8 small Tortillas (flour or corn)
  • 1 Lime (juiced)
  • 2 tbsp Fresh cilantro (optional, chopped)

Instructions

  1. Start by slicing the chicken into thin strips for even cooking.
  2. Wash and slice the bell peppers and onion into long strips.
  3. In a large bowl, combine olive oil, lime juice, and fajita seasoning mix.
  4. Add the chicken and vegetables, tossing until evenly coated. Marinate for 10-15 minutes.
  5. Preheat the air fryer to 375°F (190°C) for 3-5 minutes.
  6. Spread the marinated chicken and veggies in an even layer in the air fryer basket.
  7. Cook for 12-15 minutes, shaking the basket halfway through. Ensure chicken reaches 165°F (74°C).
  8. Once cooked, squeeze fresh lime juice over the fajita mixture and garnish with chopped cilantro before serving.

Notes

Use a meat thermometer to check chicken doneness. For extra flavor, consider adding some smoked paprika to the marinade.
