- ½ cup unsalted butter (room temperature)
- ½ cup granulated sugar
- 1 large egg
- 1 teaspoon almond extract
- 1 cup dried cherries (roughly chopped)
- 2 tablespoons water
- ¼ cup sliced almonds
Instructions
- In a small saucepan, combine chopped dried cherries and water. Heat over low until cherries soften, about 5 minutes. Allow to cool.
- In a bowl, whisk together flour, baking soda, and salt until well combined.
- In a separate bowl, beat the room temperature butter and granulated sugar until light and fluffy, about 3 minutes.
- Add the egg and almond extract to the butter mixture, blending until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Gently incorporate the cherry filling into the cookie dough, taking care not to overmix.
- Preheat your oven to 350°F (175°C). Using a spoon or cookie scoop, drop rounded tablespoons of dough onto a parchment-lined baking sheet.
- Sprinkle sliced almonds on top of each cookie to add a luxurious crunch.
- Place the cookies in the oven and bake for 12-15 minutes, until golden and slightly firm to the touch.
- Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
