A refined take on a rustic favorite, this Apple Cinnamon Cobbler features caramelized apples in a spiced filling, topped with a tender, golden crust.

  • 1 tablespoon fresh lemon juice
  • 1/2 cup granulated sugar
  • 1/3 cup packed light brown sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • Pinch of fine sea salt
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar (plus extra for sprinkling)
  • 2 teaspoons baking powder
  • 1/4 teaspoon fine sea salt
  • 8 tablespoons (1 stick) unsalted butter, cold and cubed
  • 3/4 cup whole milk or buttermilk
  • 1 large egg, beaten
  • Turbinado or demerara sugar for sprinkling (optional)
  • Vanilla ice cream or crème fraîche to serve

Instructions

  1. Preheat the oven to 375°F (190°C). Butter a 9-inch baking dish and set aside.
  2. Add the apple slices, granulated sugar, brown sugar, lemon juice, cinnamon, nutmeg, and a pinch of salt to a large skillet over medium heat. Cook until the apples soften and the sugars begin to caramelize, about 6–8 minutes.
  3. Stir in the cornstarch and vanilla, then remove from heat and transfer the filling to the prepared baking dish.
  4. Whisk the flour, 2 tablespoons sugar, baking powder, and 1/4 teaspoon salt in a bowl. Cut in the cold cubed butter until the mixture resembles coarse crumbs.
  5. Stir the beaten egg into the milk, then fold the liquid into the flour-butter mixture until just combined.
  6. Spoon or drop the topping over the apple filling in rough mounds. Sprinkle turbinado sugar over the top.
  7. Bake until the topping is golden and a knife inserted into the center meets bubbling filling, about 30–35 minutes.
  8. Let the cobbler rest for 10–15 minutes before serving.

Notes

Serve warm with vanilla ice cream or crème fraîche. For best texture, reheat individual portions in the oven.
