- 2 cups cottage cheese
- 3 large eggs
- 1/2 cup rolled oats or almond flour
- 1/4 cup maple syrup or honey
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1 large apple, peeled and finely diced
- 1 ½ tsp ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, whisk together the cottage cheese, eggs, maple syrup (or honey), and vanilla extract until well combined.
- Stir in the rolled oats (or almond flour), ground cinnamon, and baking powder.
- Gently fold in the diced apples until evenly distributed.
- Pour the mixture into a greased 9×9-inch baking dish and spread it evenly.
- Bake for 35-40 minutes or until golden brown and a toothpick comes out clean.
- Allow to cool for a few minutes before slicing and serving.
Notes
For a beautiful presentation, serve warm slices with extra maple syrup and a sprinkle of cinnamon. Can be stored in the fridge for up to four days.
