Description

A delicious and nutritious baked dish combining creamy cottage cheese, oats, and the sweet taste of apples and cinnamon.


Ingredients

  • 2 cups cottage cheese
  • 3 large eggs
  • 1/2 cup rolled oats or almond flour
  • 1/4 cup maple syrup or honey
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 large apple, peeled and finely diced
  • 1 ½ tsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the cottage cheese, eggs, maple syrup (or honey), and vanilla extract until well combined.
  3. Stir in the rolled oats (or almond flour), ground cinnamon, and baking powder.
  4. Gently fold in the diced apples until evenly distributed.
  5. Pour the mixture into a greased 9×9-inch baking dish and spread it evenly.
  6. Bake for 35-40 minutes or until golden brown and a toothpick comes out clean.
  7. Allow to cool for a few minutes before slicing and serving.

Notes

For a beautiful presentation, serve warm slices with extra maple syrup and a sprinkle of cinnamon. Can be stored in the fridge for up to four days.
