- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ¼ teaspoon nutmeg
- 2 large eggs
- ⅓ cup granulated sugar
- ¼ cup packed light brown sugar
- ¾ cup buttermilk (or milk mixed with 1 tablespoon vinegar)
- ¼ cup unsalted butter, melted
- 2 teaspoons vanilla extract
- 1½ cups peeled, diced tart apple (like Granny Smith)
- ¼ cup chopped pecans or walnuts (optional)
- 1 cup powdered sugar (for glaze)
- 2–3 tablespoons milk (for glaze)
- ½ teaspoon vanilla extract (for glaze)
- Extra powdered sugar for dusting
Instructions
- Prepare the Apples: Start by peeling, coring, and dicing the apples into small chunks. Set them aside for later.
- Mix the Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined.
- Combine the Wet Ingredients: In another bowl, whisk the eggs, granulated sugar, brown sugar, buttermilk, melted butter, and vanilla extract together until smooth.
- Combine Wet and Dry: Pour the wet mixture into the bowl with the dry ingredients. Stir gently until just combined.
- Fold in Apples and Nuts: Carefully fold in the diced apples and optional chopped nuts.
- Preheat Waffle Iron: Preheat your waffle iron to a medium setting and lightly grease it.
- Cook the Donuts: Spoon about ¼ cup of the batter onto the waffle iron for each donut and cook until golden and crisp, about 3–5 minutes.
- Cool and Prepare Glaze: Transfer cooked donuts to a wire rack to cool slightly. Whisk together the powdered sugar, milk, and vanilla in a bowl until smooth.
- Glaze the Donuts: Drizzle the glaze over the slightly cooled waffle donuts and dust with extra powdered sugar.
