Description

A delightful mashup of apple fritters and waffles, these donut treats combine juicy apples and warm spices for a satisfying crunch.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon nutmeg
  • 2 large eggs
  • ⅓ cup granulated sugar
  • ¼ cup packed light brown sugar
  • ¾ cup buttermilk (or milk mixed with 1 tablespoon vinegar)
  • ¼ cup unsalted butter, melted
  • 2 teaspoons vanilla extract
  • 1½ cups peeled, diced tart apple (like Granny Smith)
  • ¼ cup chopped pecans or walnuts (optional)
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons milk (for glaze)
  • ½ teaspoon vanilla extract (for glaze)
  • Extra powdered sugar for dusting

Instructions

  1. Prepare the Apples: Start by peeling, coring, and dicing the apples into small chunks. Set them aside for later.
  2. Mix the Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined.
  3. Combine the Wet Ingredients: In another bowl, whisk the eggs, granulated sugar, brown sugar, buttermilk, melted butter, and vanilla extract together until smooth.
  4. Combine Wet and Dry: Pour the wet mixture into the bowl with the dry ingredients. Stir gently until just combined.
  5. Fold in Apples and Nuts: Carefully fold in the diced apples and optional chopped nuts.
  6. Preheat Waffle Iron: Preheat your waffle iron to a medium setting and lightly grease it.
  7. Cook the Donuts: Spoon about ¼ cup of the batter onto the waffle iron for each donut and cook until golden and crisp, about 3–5 minutes.
  8. Cool and Prepare Glaze: Transfer cooked donuts to a wire rack to cool slightly. Whisk together the powdered sugar, milk, and vanilla in a bowl until smooth.
  9. Glaze the Donuts: Drizzle the glaze over the slightly cooled waffle donuts and dust with extra powdered sugar.
  10. Serve: Enjoy them warm or at room temperature.
