Ingredients
4 fresh cod fillets
1 can coconut milk
1 lemon (juiced and zested)

Instructions
1. Preheat your oven to 375°F (190°C).
2. In a bowl, mix the coconut milk, lemon juice, lemon zest, garlic, ginger, salt, and pepper.
3. Place cod fillets in a single layer in a baking dish.
4. Pour the coconut lemon sauce over the fillets, coating them evenly.
5. Bake for 15–20 minutes until the cod flakes easily with a fork.
