- 2 cups cherry or grape tomatoes
- 1 red bell pepper, diced
- 1/2 small red onion, diced
- 3 cloves garlic, minced
- 8 ounces feta cheese
- 4 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon sea salt
- 1/2 teaspoon dried thyme
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon red pepper flakes
- 1 cup chopped baby spinach
- 4 large eggs
- Chopped fresh basil or fresh chives (optional for topping)
Instructions
- Preheat your oven to 400°F (200°C).
- If using individual servings, divide tomatoes, bell pepper, red onion, and feta among four ramekins, drizzling a tablespoon of olive oil over each. For a single dish, mix veggies in one baking dish and place feta in the center, then drizzle olive oil over everything.
- In a bowl, combine oregano, sea salt, thyme, black pepper, and red pepper flakes; stir well.
- Sprinkle the spice mixture over the feta and veggies evenly.
- Bake for about 25 minutes until the veggies are soft and feta is golden.
- Stir the mixture until feta blends with the veggies, then fold in chopped spinach.
- Create wells in the middle of each ramekin, cracking an egg into each well.
- Return to the oven and bake for another 10 minutes until the egg whites are set but yolks are runny.
- Garnish with fresh herbs and serve hot with crusty bread or pita.
