Description

A delicious and unique breakfast or brunch dish combining creamy feta cheese, flavorful vegetables, and perfectly baked eggs.


Ingredients

Scale
  • 2 cups cherry or grape tomatoes
  • 1 red bell pepper, diced
  • 1/2 small red onion, diced
  • 3 cloves garlic, minced
  • 8 ounces feta cheese
  • 4 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon red pepper flakes
  • 1 cup chopped baby spinach
  • 4 large eggs
  • Chopped fresh basil or fresh chives (optional for topping)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. If using individual servings, divide tomatoes, bell pepper, red onion, and feta among four ramekins, drizzling a tablespoon of olive oil over each. For a single dish, mix veggies in one baking dish and place feta in the center, then drizzle olive oil over everything.
  3. In a bowl, combine oregano, sea salt, thyme, black pepper, and red pepper flakes; stir well.
  4. Sprinkle the spice mixture over the feta and veggies evenly.
  5. Bake for about 25 minutes until the veggies are soft and feta is golden.
  6. Stir the mixture until feta blends with the veggies, then fold in chopped spinach.
  7. Create wells in the middle of each ramekin, cracking an egg into each well.
  8. Return to the oven and bake for another 10 minutes until the egg whites are set but yolks are runny.
  9. Garnish with fresh herbs and serve hot with crusty bread or pita.
