Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon olive oil
  • 1/2 cup balsamic vinegar
  • 2 tablespoons honey (preferably local)
  • 8 ounces fresh mozzarella cheese, sliced
  • Fresh basil leaves, for garnish (finely chopped)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts with salt and pepper.
  3. In a large oven-safe skillet, heat olive oil over medium-high heat. Add the chicken and sear until golden brown, about 4-5 minutes per side.
  4. Pour balsamic vinegar and honey over the chicken, stirring to blend the flavors.
  5. Transfer the skillet to the oven and bake for 15 minutes, or until an internal temperature of 165°F (74°C) is reached.
  6. Remove the skillet from the oven, top each breast with sliced mozzarella, and return to the oven for an additional 5-7 minutes until the cheese is melted and bubbly.
