- 4 boneless, skinless chicken breasts
- Salt and freshly ground black pepper, to taste
- 1 tablespoon olive oil
- 1/2 cup balsamic vinegar
- 2 tablespoons honey (preferably local)
- 8 ounces fresh mozzarella cheese, sliced
- Fresh basil leaves, for garnish (finely chopped)
Instructions
- Preheat your oven to 400°F (200°C).
- Season the chicken breasts with salt and pepper.
- In a large oven-safe skillet, heat olive oil over medium-high heat. Add the chicken and sear until golden brown, about 4-5 minutes per side.
- Pour balsamic vinegar and honey over the chicken, stirring to blend the flavors.
- Transfer the skillet to the oven and bake for 15 minutes, or until an internal temperature of 165°F (74°C) is reached.
- Remove the skillet from the oven, top each breast with sliced mozzarella, and return to the oven for an additional 5-7 minutes until the cheese is melted and bubbly.
Notes
For a vibrant touch, garnish with finely chopped basil leaves. Pair with sautéed spinach or a light arugula salad.
