Warm BBQ chicken and crunchy coleslaw wrapped in soft tortillas for a cozy weeknight dinner.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup BBQ sauce
- 2 cups green cabbage, shredded
- 1 cup carrots, shredded
- ½ cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 tablespoon honey
- Salt and pepper to taste
- 4 large tortillas
- Fresh cilantro or parsley for garnish
Instructions
- In a medium bowl, mix the shredded chicken with the BBQ sauce until nicely coated.
- In another bowl, combine shredded cabbage and carrots. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper. Pour the dressing over the cabbage and carrots and mix until well combined.
- Take one tortilla and layer a scoop of BBQ chicken, followed by a handful of coleslaw.
- Fold the sides of the tortilla in and roll it tightly from the bottom up.
- Place the wraps on a plate with the seam side down, and garnish with cilantro or parsley if desired.
Notes
For extra crunch, add sliced radishes or bell peppers to your coleslaw. Use whole grain tortillas for a healthier option.
