Description

A refined version of the classic Beef Stroganoff featuring tender beef in a creamy, flavorful sauce enriched with mushrooms and aromatics.


Ingredients

  • 500g beef fillet, thinly sliced
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 250g cremini or button mushrooms, sliced
  • 1 medium onion, finely diced
  • 2 garlic cloves, minced
  • 1 tablespoon Dijon mustard
  • 1 cup beef broth
  • 200ml sour cream (preferably at room temperature)
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, finely chopped for garnish
  • Egg noodles or rice, for serving

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat. Add the sliced beef in batches, searing until browned and just cooked through. Remove and set aside.
  2. In the same skillet, melt the butter. Add the diced onion and sliced mushrooms, cook until soft and golden, roughly 5 minutes. Stir in the minced garlic for the final minute.
  3. Deglaze the pan with the beef broth, scraping up the flavorful brown bits. Stir in the Dijon mustard, then return the beef to the pan.
  4. Lower the heat and gently fold in the sour cream. Season with salt and pepper, adjusting to taste. Heat gently, ensuring the sauce does not boil, for a creamy consistency.
  5. Toss with freshly cooked egg noodles or serve over rice. Garnish with chopped parsley for a burst of color.

Notes

For a gourmet twist, consider using filet mignon instead of beef fillet or replace sour cream with crème fraîche for a tangier flavor.
