- 1 cup (227 g) unsalted butter, room temperature
- 3/4 cup (150 g) packed light brown sugar
- 1/2 cup (100 g) granulated sugar
- 2 large eggs, room temperature
- 1 tsp pure vanilla extract
- 2 1/4 cups (280 g) all-purpose flour, spooned and leveled
- 1 tsp baking powder
- 1/2 tsp fine sea salt
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- Pinch of cloves
- 1 cup mixed candied citrus peel and glacé fruit, roughly chopped
- 3/4 cup raisins or currants, soaked in 3–4 tbsp rum or orange juice for 30 minutes, drained
- 3/4 cup toasted pecans or walnuts, coarsely chopped
- 1/2 cup apricot jam, warmed and strained
- 1 tbsp rum or water to thin
- Turbinado or coarse sugar for sprinkling (optional)
- Extra chopped nuts for garnish
Instructions
- Combine mixed candied fruit and raisins in a small bowl with rum or orange juice. Let sit for 30 minutes, then drain.
- Cream room-temperature butter with brown and granulated sugar until light and fluffy. Add eggs and vanilla; mix until pale and slightly aerated.
- Whisk flour, baking powder, salt, and spices in a bowl. Gradually add to the creamed mixture until just combined.
- Gently fold in drained fruit and toasted nuts until evenly distributed.
- Using a 1½-tablespoon scoop, portion dough onto a parchment-lined baking sheet, spacing 2 inches apart. Chill for 10–15 minutes.
- Preheat oven to 350°F (180°C). Bake for 10–12 minutes, until edges are set and centers look soft.
- Brush warm cookies with warmed apricot jam thinned with reserved soaking liquid for a glossy finish. Sprinkle with coarse sugar or extra nuts if desired.
- Transfer cookies to a rack to cool completely.
