  • 2 tbsp coarse sugar or sanding sugar for sprinkling
  • 1 tsp vanilla extract (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly butter a 9×9-inch baking dish.
  2. In a medium saucepan, combine blackberries, sugar, lemon juice, and lemon zest. Cook over medium heat until the fruit releases juices and shimmers, about 4–6 minutes.
  3. Stir the cornstarch slurry into the simmering berries. Cook for 1–2 minutes until thickened. Remove from heat and adjust sugar or lemon.
  4. Pour the berry filling into the prepared dish, spreading evenly.
  5. In a bowl, whisk flour, sugar, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  6. Stir in milk, beaten egg, and vanilla just until combined, avoiding overmixing.
  7. Drop heaping tablespoons of dough onto the berry surface, spacing about 1 inch apart. Sprinkle coarse sugar over the dumplings.
  8. Bake for 25–30 minutes, until dumplings are golden and berry juices are bubbling. Let rest for 10–15 minutes before serving.

Notes
