- 3 large eggs
- ½ cup rolled oats
- ¼ cup honey or maple syrup
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- 1 cup fresh blueberries
Instructions
- Preheat the oven to 350°F (175°C) and lightly grease an 8×8-inch baking dish.
- In a large bowl, combine cottage cheese, eggs, honey (or maple syrup), and vanilla extract. Whisk until smooth.
- Stir in rolled oats, ground cinnamon, and salt until evenly distributed.
- Gently fold in fresh blueberries.
- Pour the mixture into the prepared baking dish, spreading it evenly.
- Bake for approximately 35 minutes until the center is set and the top is golden.
- Allow to cool slightly before serving.
Notes
