- 2–3 lbs Beef Chuck Roast (or your choice of meat)
- 3 tbsp Olive Oil
- 4–5 cloves Garlic, minced
- 1 large Onion, diced
- 28 oz (1 can) Crushed Tomatoes
- 2 tbsp Tomato Paste
- 1 cup Beef Stock (or chicken/vegetable)
- ½ cup Red Wine (optional)
- Handful Fresh Basil
- 1 tsp Dried Oregano
- Salt and Pepper to taste
Instructions
- Season the meat generously with salt and pepper.
- Heat olive oil in a Dutch oven over medium-high heat and sear the meat on all sides until golden brown.
- Remove the meat and sauté garlic and onions in the same pot until fragrant.
- Deglaze the pot with red wine, scraping the browned bits off the bottom.
- Stir in tomato paste, crushed tomatoes, and beef stock. Season with oregano and basil.
- Return the meat to the pot, ensuring it is mostly submerged in the sauce.
- Cover and simmer on low heat for 2-3 hours, or transfer to a 300°F oven.
- Check occasionally and stir to avoid sticking, adjusting seasonings as necessary.
Notes
Best served with pasta, rice, or crusty bread. Flavors deepen after a day in the fridge, making leftovers even better.
