- 1 cup all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk (preferably whole)
- 1 large egg (room temperature)
- 2 tablespoons butter (melted and cooled)
- 1 cup maple syrup (or to taste)
- 1 teaspoon vanilla extract
- Fresh berries (such as blueberries or strawberries)
- Whipped cream (optional)
- Powdered sugar for dusting
Instructions
- In a mixing bowl, whisk together the flour, sugar, baking powder, and salt until well blended. In a separate bowl, combine the milk, egg, and melted butter. Gradually whisk the wet ingredients into the dry ingredients, mixing until smooth.
- Preheat a non-stick skillet over medium heat and lightly grease it with butter.
- Drop tablespoon-sized dollops of batter onto the skillet, cooking for 2–3 minutes until bubbles form. Flip and cook for an additional 1–2 minutes until golden brown.
- In a small saucepan over low heat, combine the maple syrup and vanilla extract, stirring gently until warm.
- Stack the pancake poppers in a serving bowl. Drizzle with the warm maple sauce and top with fresh berries and whipped cream, if desired.
Notes
For optimal storage, allow poppers to cool completely before refrigerating. Reheat in a skillet or microwave as needed.
