- 1 large head cauliflower, cut into bite-size florets (about 4–5 cups)
- 1–2 tablespoons olive oil (optional for extra browning)
- 1/2 cup all-purpose flour (or gluten-free flour)
- 1/2 cup water or unsweetened plant milk
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika (optional)
- 1/4 teaspoon salt
- A pinch of black pepper
- 1/3 cup hot sauce (like Frank’s RedHot)
- 2 tablespoons unsalted butter, melted (or vegan butter)
- 1 teaspoon honey or maple syrup (optional)
- Ranch or blue cheese dressing (for serving)
- Celery sticks or sliced carrots (for serving)
- Chopped fresh parsley or green onions (for garnish)
Instructions
- Preheat the air fryer to 400°F (200°C) for about 5 minutes.
- Cut the cauliflower into even bite-size florets and pat dry with a towel.
- Mix the flour, water (or plant milk), garlic powder, smoked paprika, salt, and pepper in a bowl until smooth.
- Toss cauliflower in the batter, coating each piece evenly and shaking off excess batter.
- Lightly spray or brush the air fryer basket with oil and place florets in a single layer.
- Air fry at 400°F for 10 minutes, then gently shake or flip the florets and air fry another 6–8 minutes until golden and crisp.
- While the cauliflower cooks, whisk together the hot sauce, melted butter, and honey or maple syrup in a bowl.
- Toss the hot cauliflower in the buffalo sauce until well coated and serve immediately.
Notes
For the best texture, serve the cauliflower right after saucing. To make it gluten-free, use gluten-free flour.
