Ingredients

  • 1 large head cauliflower, cut into bite-size florets (about 45 cups)
  • 12 tablespoons olive oil (optional for extra browning)
  • 1/2 cup all-purpose flour (or gluten-free flour)
  • 1/2 cup water or unsweetened plant milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika (optional)
  • 1/4 teaspoon salt
  • A pinch of black pepper
  • 1/3 cup hot sauce (like Frank’s RedHot)
  • 2 tablespoons unsalted butter, melted (or vegan butter)
  • 1 teaspoon honey or maple syrup (optional)
  • Ranch or blue cheese dressing (for serving)
  • Celery sticks or sliced carrots (for serving)
  • Chopped fresh parsley or green onions (for garnish)

Instructions

  1. Preheat the air fryer to 400°F (200°C) for about 5 minutes.
  2. Cut the cauliflower into even bite-size florets and pat dry with a towel.
  3. Mix the flour, water (or plant milk), garlic powder, smoked paprika, salt, and pepper in a bowl until smooth.
  4. Toss cauliflower in the batter, coating each piece evenly and shaking off excess batter.
  5. Lightly spray or brush the air fryer basket with oil and place florets in a single layer.
  6. Air fry at 400°F for 10 minutes, then gently shake or flip the florets and air fry another 6–8 minutes until golden and crisp.
  7. While the cauliflower cooks, whisk together the hot sauce, melted butter, and honey or maple syrup in a bowl.
  8. Toss the hot cauliflower in the buffalo sauce until well coated and serve immediately.

Notes

For the best texture, serve the cauliflower right after saucing. To make it gluten-free, use gluten-free flour.
