- 1 1/2 cups granulated sugar
- 1/2 cup unsalted butter, softened
- 1/4 cup honey
- 3 large eggs, at room temperature
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 pie crust (store-bought or homemade)
Instructions
- Preheat your oven to 350°F (175°C).
- In a saucepan over medium heat, mix together the granulated sugar, softened butter, and honey. Stir occasionally until the mixture becomes a deep amber color, about 5 to 10 minutes.
- Once the mixture is dark and aromatic, remove it from the heat and allow it to cool for a few minutes.
- In a large bowl, whisk the room temperature eggs until they’re well beaten. Slowly add the cooled honey mixture, whisking continuously to prevent the eggs from cooking.
- Stir in the heavy cream, vanilla extract, and salt until fully combined and creamy.
- Carefully pour the filling into the prepared pie crust, ensuring it’s evenly distributed.
- Bake for 35 to 40 minutes until the edges are set but the center is slightly jiggly.
- Allow the pie to cool at room temperature for at least 2 hours before serving.
Notes
Serve chilled or at room temperature with whipped cream or vanilla ice cream. Store leftovers covered in the fridge for up to 4 days or freeze for up to a month.
