  • 1 cup dark brown sugar
  • 1 cup butterscotch chips
  • 3 cups all-purpose flour
  • ¾ tsp salt
  • ½ tsp baking soda
  • 2 large eggs, whisked in a small bowl
  • 1 tsp butterscotch or butter extract
  • ½ cup unsalted butter, softened to room temperature (1 stick)
  • 2 cups powdered sugar
  • ½ tsp butterscotch or butter extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the cold butter cubes and both sugars. Beat together until fluffy and light.
  3. Gradually mix in the whisked eggs and extract, building flavor and richness.
  4. In a separate bowl, whisk together the flour, salt, and baking soda. Slowly add to the butter mixture, stirring just until combined.
  5. Fold in the butterscotch chips gently, ensuring not to overmix.
  6. Drop spoonfuls of the dough onto a lined baking sheet, spaced about 2 inches apart.
