Description
This rustic Butternut Squash and Goat Cheese Galette features a flaky pie crust filled with roasted squash, caramelized onions, and tangy goat cheese. It’s perfect for fall dinners, holiday gatherings, or any cozy night at home.
Ingredients
1 sheet of pie crust
2 cups butternut squash, peeled and diced
4 oz goat cheese, crumbled
1 large onion, sliced
2 tablespoons olive oil
1 tablespoon fresh thyme leaves
Salt and pepper to taste
1 egg, beaten
Instructions
1. Preheat oven to 400°F (200°C).
2. Toss diced butternut squash with olive oil, salt, and pepper. Roast on a baking sheet for 20–25 minutes until tender.
3. While squash roasts, sauté onions in a skillet over medium heat for 10–15 minutes until caramelized.
4. Roll out pie crust on a parchment-lined baking sheet. If needed, gently roll to adjust the shape.
5. Layer roasted squash, caramelized onions, and goat cheese in the center of the crust, leaving a 2-inch border.
6. Fold the crust edges over the filling, pleating gently as you go.
7. Brush crust with the beaten egg for a golden finish.
8. Sprinkle with fresh thyme leaves.
9. Bake the galette for 25–30 minutes, or until the crust is golden brown.
10. Let cool for a few minutes before slicing and serving.
Notes
Add a pinch of nutmeg or cinnamon to the squash for extra warmth.
Substitute goat cheese with ricotta or feta if preferred.
Serve with a fresh green salad for a balanced meal.
