Description

A quick and bold keto late-night snack featuring hard-boiled eggs smothered in a rich, spicy garlic butter sauce.


Ingredients

  • 68 large hard-boiled eggs, peeled and cooled
  • 1 stick (8 tbsp) unsalted butter
  • 1/4 cup thinly sliced onions (white or yellow)
  • 1 tablespoon minced fresh garlic
  • 1 teaspoon garlic paste (optional)
  • 1/4 cup vegetable broth (low-sodium)
  • 1 teaspoon Old Bay seasoning
  • 1/4 teaspoon cayenne pepper (to taste)
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Boil the eggs in cold water for 9–12 minutes, then transfer to an ice bath to cool and peel.
  2. Melt the stick of unsalted butter in a medium saucepan over medium heat until browned slightly.
  3. Add the sliced onions and sauté for 3–4 minutes until soft and fragrant.
  4. Stir in minced garlic and garlic paste, cooking for 30–45 seconds.
  5. Add Old Bay, cayenne, smoked paprika, garlic powder, onion powder, and red pepper flakes; stir well.
  6. Pour in the vegetable broth and gently simmer for 4–5 minutes until the sauce reduces slightly.
  7. Pour the sauce over the peeled eggs and let them soak in the flavors.
  8. Serve warm or chilled, garnished with extra paprika or chopped parsley as desired.

Notes

For best texture, store sauce separately from eggs if refrigerating. Serve with sliced veggies or make a keto snack board.
