- 1 ¾ cup all-purpose flour
- 1 Tbsp ground cinnamon
- 1 tsp baking soda
- ½ tsp salt
- 1 ½ cups unsalted butter, softened
- 1 cup light brown sugar
- ½ cup granulated sugar
- 2 large eggs
- 1 Tbsp vanilla extract
- 3 cups old-fashioned rolled oats
- 1 apple, peeled and diced
- 10 oz caramel baking chips
Instructions
- Preheat your oven to 350°F (175°C).
- In a small bowl, combine the flour, cinnamon, baking soda, and salt; set aside.
- In a large bowl, beat the softened butter with both sugars until light and fluffy.
- Beat in the eggs one at a time, followed by the vanilla extract.
- Gradually add the dry mixture to the wet ingredients and mix until just combined.
- Gently stir in the rolled oats.
- Toss the diced apple in a little flour and fold them into the cookie dough along with the caramel chips.
- Drop dough onto baking sheets lined with parchment paper.
- Bake for 10-12 minutes, or until the edges are lightly browned.
- Allow to cool on baking sheets before transferring to wire racks to cool completely.
Notes
Serve warm with a glass of milk or a scoop of vanilla ice cream. Store in an airtight container for up to one week or freeze for up to three months.
