Description

Ingredients

  • 1 ¾ cup all-purpose flour
  • 1 Tbsp ground cinnamon
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 ½ cups unsalted butter, softened
  • 1 cup light brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 Tbsp vanilla extract
  • 3 cups old-fashioned rolled oats
  • 1 apple, peeled and diced
  • 10 oz caramel baking chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a small bowl, combine the flour, cinnamon, baking soda, and salt; set aside.
  3. In a large bowl, beat the softened butter with both sugars until light and fluffy.
  4. Beat in the eggs one at a time, followed by the vanilla extract.
  5. Gradually add the dry mixture to the wet ingredients and mix until just combined.
  6. Gently stir in the rolled oats.
  7. Toss the diced apple in a little flour and fold them into the cookie dough along with the caramel chips.
  8. Drop dough onto baking sheets lined with parchment paper.
  9. Bake for 10-12 minutes, or until the edges are lightly browned.
  10. Allow to cool on baking sheets before transferring to wire racks to cool completely.

Notes

Serve warm with a glass of milk or a scoop of vanilla ice cream. Store in an airtight container for up to one week or freeze for up to three months.
