Ingredients

  • 1½ cups all-purpose flour
  • ½ cup granulated sugar
  • ½ cup unsalted butter, room temperature
  • ½ teaspoon salt
  • 4 medium apples, peeled and diced
  • ½ cup brown sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons lemon juice
  • 1 cup rolled oats
  • ½ cup brown sugar
  • ½ cup unsalted butter, melted
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish with butter or line it with parchment paper.
  2. In a mixing bowl, combine flour, granulated sugar, and salt. Add the room temperature butter until the mixture resembles coarse crumbs.
  3. Press this mixture evenly into the bottom of your prepared dish.
  4. Bake for 15 minutes until lightly golden.
  5. In a saucepan over medium heat, toss the diced apples, brown sugar, cinnamon, and lemon juice. Sauté until the apples soften and caramelize, about 5-7 minutes.
  6. In a separate bowl, mix the rolled oats, brown sugar, melted butter, vanilla extract, and salt until well combined.
  7. Remove the base from the oven, layer the caramelized apple mixture over it, and sprinkle the oat topping on top.
  8. Return to the oven and bake for an additional 25-30 minutes, until the topping is golden brown and the filling is bubbly.
  9. Allow to cool completely in the dish before slicing into bars for serving.
