Description

A delightful twist on a classic dish featuring tender chicken, colorful veggies, and a buttery biscuit topping, all melted with cheddar cheese.

Ingredients

Scale
  • 2 cups cooked chicken, shredded
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 1 can cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 1 package biscuit mix
  • 1/2 cup butter, melted
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the shredded chicken, mixed vegetables, cream of chicken soup, and garlic powder. Add salt and pepper to taste, then mix well. Spread this mixture evenly into a greased 9×13-inch baking dish.
  3. In a separate bowl, combine the biscuit mix and milk. Stir until just combined.
  4. Pour the biscuit mixture gently over the chicken and vegetable layer in the baking dish.
  5. Drizzle the melted butter evenly over the biscuit mix.
  6. Bake for 25-30 minutes, or until the biscuits are golden brown and cooked through.
  7. Once baked, sprinkle the shredded cheddar cheese on top, then return to the oven for an additional 5 minutes to melt the cheese.
  8. Let it cool slightly before serving.

Notes

This dish pairs wonderfully with a simple green salad or steamed green beans. You can substitute the vegetables for your favorites, add some pepper for heat, or make it gluten-free with appropriate substitutions.
