Description

A warm and comforting soup that combines the rich flavors of a classic cheeseburger in a creamy broth.


Ingredients

Scale
  • 1 lb lean ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups beef broth
  • 1 cup potatoes, diced
  • 1 cup milk
  • 2 cups shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Optional toppings: diced pickles, sour cream, extra cheese, hot sauce

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain any excess fat.
  2. Add the chopped onion, minced garlic, diced carrots, and diced celery. Cook until softened, about 5 minutes.
  3. Pour in the beef broth and add the diced potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
  4. Stir in the milk and shredded cheese, continuing to stir until cheese is melted and soup is smooth.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with optional toppings.

Notes

You can substitute ground turkey for a lighter version or add extra veggies for more nutrition. This soup is also freezer-friendly.
