Ingredients

- 1 lb lean ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups beef broth
- 1 cup potatoes, diced
- 1 cup milk
- 2 cups shredded cheese (cheddar or your choice)
- Salt and pepper to taste
- Optional toppings: diced pickles, sour cream, extra cheese, hot sauce
Instructions
- In a large pot, brown the ground beef over medium heat. Drain any excess fat.
- Add the chopped onion, minced garlic, diced carrots, and diced celery. Cook until softened, about 5 minutes.
- Pour in the beef broth and add the diced potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
- Stir in the milk and shredded cheese, continuing to stir until cheese is melted and soup is smooth.
- Season with salt and pepper to taste.
- Serve hot, garnished with optional toppings.
Notes
You can substitute ground turkey for a lighter version or add extra veggies for more nutrition. This soup is also freezer-friendly.
