Description

A quick and delicious one-pan dish featuring chicken and vibrant bell peppers, perfect for busy weeknights.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup corn (fresh or frozen)
  • 1 cup diced tomatoes
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream (optional for serving)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Cut the chicken into bite-sized pieces and season with chili powder, cumin, paprika, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the seasoned chicken and cook for 5-7 minutes, stirring occasionally until browned and cooked through.
  4. Toss in the sliced bell peppers and sauté for 5 minutes until they begin to soften.
  5. Add corn and diced tomatoes, and cook for an additional 3-5 minutes.
  6. Sprinkle shredded cheddar cheese over the top, cover, and let sit until melted.
  7. Garnish with fresh cilantro, serve with sour cream if desired.

Notes

For added heat, include sliced jalapeños or cayenne pepper. You can also substitute Monterey Jack or pepper jack cheese.
