- 2 pounds baby Yukon gold potatoes, halved
- 1 pound smoked sausage, sliced
- 2 tablespoons olive oil, for drizzling
- 1 packet ranch seasoning mix
- 1 cup sour cream, at room temperature
- 1 cup shredded sharp cheddar cheese
- Fresh chives, finely chopped, for garnish
Instructions
- Preheat your oven to 400°F (200°C) and lightly grease a large baking dish with olive oil.
- In a mixing bowl, combine the halved potatoes and sliced sausage. Drizzle with olive oil and sprinkle with half of the ranch seasoning mix. Toss to coat.
- Arrange the mixture evenly in the greased baking dish and bake for 30 minutes, or until the potatoes are tender and starting to caramelize, turning halfway through.
- Meanwhile, mix the remaining ranch seasoning with the sour cream until smooth.
- Once the potatoes are golden and tender, remove from the oven, drizzle the ranch mixture over top, and sprinkle with cheddar cheese.
- Return to the oven and bake for an additional 10 minutes, until the cheese is bubbly and golden.
- Remove from the oven and allow to cool slightly. Garnish with chives before serving.
Notes
For added crunch, consider mixing breadcrumbs with parmesan cheese before the final bake. Add red pepper flakes for heat if desired.
