- 2 slices of sourdough or artisan bread
- 1/2 ripe avocado, mashed
- 1/2 cup cooked shredded chicken (grilled or rotisserie)
- 2 slices of cheddar or Monterey Jack cheese
- 1 tbsp mayonnaise or aioli (optional)
- 1 tsp lemon juice
- Salt and pepper to taste
- 1 tbsp butter (for toasting)
- Optional add-ins: Sliced tomato, red onion, or crispy bacon
Instructions
- Prepare the Avocado Spread: In a small bowl, combine the mashed avocado, lemon juice, and a pinch of salt and pepper. Mix well to create a creamy spread.
- Assemble the Sandwich: Spread mayonnaise on one side of each slice of bread. On the opposite side of one slice, add the avocado mixture. Layer with shredded chicken and top with cheese. Place the second slice of bread on top, mayo side facing out.
- Toast the Sandwich: In a skillet, melt butter over medium heat. Carefully add the sandwich and grill it for 3–4 minutes on each side. Press it gently with a spatula to achieve a golden brown crust and ensure the cheese melts deliciously.
- Serve the Sandwich: Once toasted, remove the sandwich from the skillet, slice it in half, and enjoy it hot!
Notes
Serve with a side of crispy fries or a fresh salad. Store leftovers wrapped tightly in plastic wrap in the refrigerator for up to 2 days.
