Ingredients

- 700 grams of Chicken (bone-in pieces: leg, thigh, drumstick)
- 2–3 Shallot onions (thinly sliced)
- 1 tablespoon Garlic paste
- Spices: ginger, cumin, coriander, garam masala, chili powder
- Tomato puree or chopped tomatoes
- Salt to taste
- Cooking oil
- Fresh cilantro for garnish
Instructions
- Heat a splash of cooking oil in a pot over medium heat.
- Add the sliced shallots and cook until golden brown.
- Stir in the garlic paste and cook for about one minute.
- Add the chicken pieces and cook until lightly browned on all sides.
- Add the ginger, cumin, coriander, garam masala, and chili powder, sautéing for a few minutes.
- Mix in the tomato puree or chopped tomatoes and season with salt.
- Pour in water to reach desired sauce thickness and bring to a boil.
- Cover and simmer until the chicken is cooked through and tender, about 30-40 minutes.
- Sprinkle fresh cilantro on top before serving.
- Serve hot with rice or naan.
Notes
Adjust spice levels and feel free to add vegetables for more texture. The dish is suitable for freezing and can be reheated when needed.
