- 2 boneless, skinless chicken breasts, marinated
- 4 large flour tortillas, room temperature
- 1 cup cooked white rice, fluffy and tender
- ½ cup chipotle ranch dressing, prepared
- 1 cup shredded lettuce, crisp
- ½ cup diced tomatoes, fresh
- ½ cup shredded cheddar cheese, sharp
- ¼ cup fresh cilantro, finely chopped
Instructions
- Marinate the chicken breasts in chipotle ranch dressing for at least 30 minutes.
- Preheat the grill to medium-high heat. Grill chicken for 6 to 8 minutes per side until cooked through.
- Remove chicken from the grill, let rest, then slice against the grain.
- On each tortilla, layer rice, grilled chicken, chipotle ranch sauce, and fresh toppings.
- Wrap the burrito tightly by folding in the sides and rolling from the bottom up.
- Optional: Grill wrapped burritos for an additional minute on each side to toast.
