Description

A flavorful combination of grilled chicken, chipotle ranch sauce, and fresh toppings wrapped in a warm tortilla.


Ingredients

  • 2 boneless, skinless chicken breasts, marinated
  • 4 large flour tortillas, room temperature
  • 1 cup cooked white rice, fluffy and tender
  • ½ cup chipotle ranch dressing, prepared
  • 1 cup shredded lettuce, crisp
  • ½ cup diced tomatoes, fresh
  • ½ cup shredded cheddar cheese, sharp
  • ¼ cup fresh cilantro, finely chopped

Instructions

  1. Marinate the chicken breasts in chipotle ranch dressing for at least 30 minutes.
  2. Preheat the grill to medium-high heat. Grill chicken for 6 to 8 minutes per side until cooked through.
  3. Remove chicken from the grill, let rest, then slice against the grain.
  4. On each tortilla, layer rice, grilled chicken, chipotle ranch sauce, and fresh toppings.
  5. Wrap the burrito tightly by folding in the sides and rolling from the bottom up.
  6. Optional: Grill wrapped burritos for an additional minute on each side to toast.
