- ½ cup unsalted butter, softened
- ½ cup granulated sugar
- ½ cup brown sugar, packed
- 1 large egg
- 2 teaspoons vanilla extract
- ½ cup brown sugar, packed (for filling)
- 2 teaspoons ground cinnamon (for filling)
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the flour, baking powder, salt, and ground cinnamon.
- In a large bowl, cream the softened butter with both granulated and brown sugars until fluffy.
- Beat in the egg and vanilla extract until smooth.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- In a small bowl, mix together the brown sugar and cinnamon for the filling.
- Spread half of the cookie dough on a piece of parchment paper and sprinkle the cinnamon filling over it evenly.
- Roll the dough tightly using the parchment paper as a guide, then repeat with the remaining dough.
- Slice the rolled dough into rounds and place on a prepared baking sheet.
- Bake for 10-12 minutes, or until golden brown.
Notes
For a delightful finishing touch, dust with powdered sugar or drizzle with icing before serving.
