Description

A simple and soft loaf that tastes like a cinnamon roll, baked in one pan using cottage cheese for added moisture and flavor.


Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1/4 cup melted butter
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a mixing bowl, combine cottage cheese, flour, sugar, eggs, melted butter, baking powder, cinnamon, vanilla extract, and salt.
  3. Mix until well combined.
  4. Pour the batter into the prepared loaf pan.
  5. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow to cool before slicing and serving.

Notes

For best texture, use full-fat cottage cheese. Measure flour lightly and allow the melted butter to cool slightly before mixing.
