Description

Ingredients

  • 1 egg yolk
  • 1 tablespoon Dijon mustard
  • 2 tablespoons red wine vinegar
  • 1 clove garlic, minced
  • 1 cup vegetable oil or olive oil
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Optional: Anchovy paste

Instructions

  1. In a medium bowl, whisk together the egg yolk, Dijon mustard, red wine vinegar, and minced garlic.
  2. While whisking, slowly drizzle in the oil until it emulsifies and creates a creamy texture.
  3. Stir in the grated Parmesan cheese and season with salt and pepper.

  5. Drizzle the dressing over your salad greens and toss to coat.
