Description

This tropical jam combines sweet pineapple, creamy coconut, and a spicy kick from chili flakes, perfect for toast, grilled meats, or cheese platters.


Ingredients

  • 2 cups fresh pineapple, diced small
  • 1 cup shredded unsweetened coconut
  • 12 teaspoons red chili flakes
  • 1 teaspoon ground ginger
  • 1/4 cup fresh lime juice
  • 1 cup granulated sugar
  • 1/4 cup honey
  • 1 packet (1.75 oz) fruit pectin

Instructions

  1. Prepare ingredients: dice pineapple, measure coconut, juice lime, and have pectin ready.
  2. In a large pot, combine pineapple, coconut, and lime juice; cook over medium heat for 8-10 minutes, stirring occasionally.
  3. Add sugar, honey, chili flakes, and ginger; stir until the sugar melts and bring to a rolling boil for 5 minutes.
  4. Stir in the fruit pectin and boil for another 2 minutes until thickened.
  5. Remove from heat and let cool for 5 minutes before transferring to sterilized jars.
  6. Seal jars and process in a boiling water bath for 10 minutes to preserve.

Notes

Chop pineapple small for quick cooking. Use unsweetened coconut to balance sweetness. Taste as you go for desired spice level.
