Description

Ingredients

  • 1 cup cottage cheese (room temperature)
  • 3 large eggs (separated)
  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • Fresh herbs (finely chopped, optional)
  • A sprinkle of sea salt (optional)

Instructions

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat the egg whites with cream of tartar until stiff peaks form.
  3. In another bowl, combine the cottage cheese, egg yolks, and salt. Stir until smooth.
  4. Gently fold one-third of the egg whites into the cottage cheese mixture.
  5. Carefully fold in the remaining egg whites without deflating the mixture.
  6. Divide the batter into mounds on the prepared baking sheet.
  7. Bake for 25-30 minutes until golden brown and firm to the touch.

Notes

For best texture, use room temperature ingredients. You can enhance flavor with spices or herbs, and for a golden crust, broil for the last minute of baking.
