Description

This cottage cheese egg bake is creamy, fluffy, and packed with protein, perfect for breakfast, brunch, or meal prep.


Ingredients

6 large eggs, room temperature

2 cups cottage cheese (full-fat or low-fat)

1 cup shredded cheese (cheddar, mozzarella, or blend)

1 cup chopped spinach (fresh or thawed and drained)

Salt and pepper to taste


Instructions

1. Preheat your oven to 350°F (175°C) and grease a medium baking dish.

2. In a large bowl, whisk together the eggs until smooth.

3. Add cottage cheese and shredded cheese. Stir to combine.

4. Fold in chopped spinach and season with salt and pepper.

5. Pour the mixture into the prepared baking dish and smooth the top.

6. Bake for 35–40 minutes, or until the center is set and the top is golden.

7. Let it cool for 5–10 minutes before slicing and serving.

Notes

Use full-fat cottage cheese for added richness.

Squeeze out extra moisture if using frozen spinach.

Add cooked bacon, sausage, or herbs for variation.
