Ingredients

  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 3 tablespoons room temperature butter
  • ¼ cup cold water
  • ½ cup crushed tomatoes (preferably San Marzano)
  • 1 teaspoon dried oregano
  • 1 clove garlic, minced
  • ¼ teaspoon freshly cracked black pepper
  • 1 cup cottage cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil leaves, finely chopped, for garnish

Instructions

  1. In a mixing bowl, combine flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add cold water, stirring until a dough forms.
  2. On a lightly floured surface, roll the dough to approximately ¼ inch thickness. Cut into small squares or circles, about 3 inches each.
  3. Preheat your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper.
  4. Place the cut dough on the prepared baking sheet. Bake for 8-10 minutes or until lightly golden and crisp.
  5. In a small saucepan, combine crushed tomatoes, oregano, garlic, and black pepper. Simmer on low heat for 5-7 minutes.
  6. Remove the baked bases from the oven. Spread a spoonful of sauce onto each base. Top generously with cottage cheese and a sprinkling of mozzarella.
  7. Return to the oven and bake for an additional 10-12 minutes, or until the cheese is bubbling and golden.
  8. Once baked, remove from the oven and sprinkle with fresh basil for an aromatic finish.

Notes
