- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 3 tablespoons room temperature butter
- ¼ cup cold water
- ½ cup crushed tomatoes (preferably San Marzano)
- 1 teaspoon dried oregano
- 1 clove garlic, minced
- ¼ teaspoon freshly cracked black pepper
- 1 cup cottage cheese
- 1 cup shredded mozzarella cheese
- Fresh basil leaves, finely chopped, for garnish
Instructions
- In a mixing bowl, combine flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add cold water, stirring until a dough forms.
- On a lightly floured surface, roll the dough to approximately ¼ inch thickness. Cut into small squares or circles, about 3 inches each.
- Preheat your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper.
- Place the cut dough on the prepared baking sheet. Bake for 8-10 minutes or until lightly golden and crisp.
- In a small saucepan, combine crushed tomatoes, oregano, garlic, and black pepper. Simmer on low heat for 5-7 minutes.
- Remove the baked bases from the oven. Spread a spoonful of sauce onto each base. Top generously with cottage cheese and a sprinkling of mozzarella.
- Return to the oven and bake for an additional 10-12 minutes, or until the cheese is bubbling and golden.
- Once baked, remove from the oven and sprinkle with fresh basil for an aromatic finish.
Notes
For elegant presentation, serve on a rustic wooden board. Drizzle with olive oil or balsamic reduction for added flavor.
