Description
A fresh and refined approach to nutritious meal wraps made with creamy cottage cheese and vibrant vegetables, perfect for light lunches or impressive appetizers.
Ingredients
Scale
- 1 cup cottage cheese (preferably low-fat, at room temperature)
- 4 large lettuce leaves (Romaine or butter lettuce)
- 1 small carrot, julienned
- ½ cucumber, thinly sliced
- ½ red bell pepper, thinly sliced
- 2 tablespoons fresh lemon juice
- 1 tablespoon extra virgin olive oil
- Sea salt and cracked black pepper (to taste)
- Fresh herbs, finely chopped (such as dill, parsley, or chives)
- Optional: microgreens for garnishing
Instructions
- Prepare the Dressing: In a small bowl, whisk together fresh lemon juice, olive oil, sea salt, and cracked black pepper until well combined.
- Assemble the Fillings: In a separate bowl, mix the cottage cheese with your choice of freshly chopped herbs.
- Layer the Wraps: Take one lettuce leaf and spoon a generous amount of the cottage cheese mixture onto its center. Top with julienned carrots, cucumber slices, and red bell pepper strips.
- Roll and Secure: Carefully fold the sides of the lettuce leaf inward and then roll from the bottom upwards, tucking in the fillings as you go. Secure with a toothpick if necessary for stability.
- Drizzle and Serve: Arrange wraps on a platter, and lightly drizzle with the prepared dressing. Garnish with microgreens and additional herbs.
Notes
For best results, consume wraps within 24 hours to avoid wilting. Experiment with different herbs and a pinch of red pepper flakes for added flavor.
