Cranberry Apple Twice-Baked Sweet Potatoes

Description

A delightful autumn dish combining sweet potatoes with cranberries and apples, perfect for fall gatherings.


Ingredients

Scale
  • 2 large sweet potatoes
  • Salt to taste
  • 1 cup fresh or frozen cranberries
  • 1 juicy apple, diced
  • 2 tablespoons unsalted butter
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 2 tablespoons maple syrup

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Gently pierce the sweet potatoes with a fork and bake for 45-50 minutes until soft.
  3. Let cool for a few minutes.
  4. In a skillet over medium heat, melt the butter.
  5. Add the diced apple, cranberries, nutmeg, cinnamon, and a pinch of salt. Cook for 5-7 minutes until the fruit is tender.
  6. Stir in the maple syrup and cook for another 2 minutes.
  7. Slice each sweet potato in half lengthwise and scoop out most of the flesh.
  8. Mash the scooped sweet potato and mix with half of the cranberry apple filling.
  9. Spoon the mixture back into the sweet potato skins.
  10. Top with the remaining cranberry apple mixture.
  11. Bake again for 10-12 minutes until heated through.

Notes

Can be served as a stunning side dish or a comforting meal. Customize by swapping fruits or adding nuts.
