Description

A comforting and indulgent dish combining silky pasta with sweet, caramelized onions and a creamy sauce.


Ingredients

Scale
  • Pasta of choice (spaghetti, fettuccine, or your favorite type)
  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 cup heavy cream (or coconut cream for a vegan option)
  • 1 cup grated Parmesan cheese (or nutritional yeast for a vegan option)
  • 1 tablespoon chili oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pasta according to the package instructions, then drain and set aside.
  2. Heat olive oil in a large pan over medium heat, add the sliced onions, and sauté until golden brown and caramelized (about 15 to 20 minutes).
  3. Reduce heat to low and stir in the heavy cream (or coconut cream). If using nutritional yeast, add it now.
  4. Mix in the grated Parmesan cheese (or nutritional yeast), and season with salt and pepper. Stir until the sauce thickens slightly.
  5. Add the cooked pasta to the sauce, tossing to coat evenly.
  6. Drizzle with chili oil before serving and sprinkle with chopped parsley.

Notes

For make-ahead, caramelize the onions in advance and store in the fridge. You can add spinach, mushrooms, or cooked chicken for variations.
