Ingredients

- Pasta of choice (spaghetti, fettuccine, or your favorite type)
- 2 large onions, thinly sliced
- 2 tablespoons olive oil
- 1 cup heavy cream (or coconut cream for a vegan option)
- 1 cup grated Parmesan cheese (or nutritional yeast for a vegan option)
- 1 tablespoon chili oil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the pasta according to the package instructions, then drain and set aside.
- Heat olive oil in a large pan over medium heat, add the sliced onions, and sauté until golden brown and caramelized (about 15 to 20 minutes).
- Reduce heat to low and stir in the heavy cream (or coconut cream). If using nutritional yeast, add it now.
- Mix in the grated Parmesan cheese (or nutritional yeast), and season with salt and pepper. Stir until the sauce thickens slightly.
- Add the cooked pasta to the sauce, tossing to coat evenly.
- Drizzle with chili oil before serving and sprinkle with chopped parsley.
Notes
For make-ahead, caramelize the onions in advance and store in the fridge. You can add spinach, mushrooms, or cooked chicken for variations.
