Description

A warm, creamy dip filled with melted cheese and mild heat, perfect for parties or cozy nights in.


Ingredients

  • 8 oz (225 g) cream cheese, softened to room temperature
  • 1 cup (240 g) sour cream or plain Greek yogurt
  • 1 1/2 cups (160 g) shredded sharp cheddar
  • 1 cup (110 g) shredded Monterey Jack or mozzarella
  • 1 can (4 oz) diced green chiles, drained (or 1 small jalapeño, seeded and finely chopped)
  • 1 clove garlic, minced (or 1/2 tsp garlic powder)
  • 1/2 tsp onion powder
  • 1/4 tsp smoked paprika (optional)
  • Salt and black pepper to taste
  • 2 tbsp chopped green onions or chives
  • 1/4 cup breadcrumbs or extra cheese for topping (optional)
  • Crackers, tortilla chips, toasted baguette slices, or raw veggies for dipping

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a medium bowl, beat the softened cream cheese until smooth. Add the sour cream and mix until silky.
  3. Stir in shredded cheddar, Monterey Jack, green chiles or jalapeño, minced garlic, onion powder, smoked paprika, salt, and pepper. Mix until combined.
  4. Transfer the mixture to a small ovenproof baking dish and smooth the top.
  5. Sprinkle breadcrumbs or extra cheese over the surface if desired.
  6. Bake for 18–22 minutes until bubbling at the edges and lightly golden on top.
  7. For a browned top, switch to broil for 1–2 minutes, watching closely.
  8. Remove from the oven and let sit for 3–5 minutes before serving.
  9. Garnish with chopped green onions and serve warm.

Notes

Soften cream cheese before mixing for a smooth dip. Shred cheese from blocks for better melt.
