A warm and comforting soup with tender chicken and savory spices, perfect for chilly nights.


Ingredients

  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 can (14 oz) diced tomatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1 cup tortilla chips
  • Fresh lime wedges
  • Fresh cilantro, chopped

Instructions

  1. In a large pot, heat a splash of oil over medium heat. Add the diced onion and minced garlic. Sauté for about 3-4 minutes until soft.
  2. Stir in the shredded chicken, diced tomatoes, black beans, chicken broth, cumin, chili powder, salt, and pepper. Bring to a boil, then reduce heat and let it simmer for 20 minutes.
  3. After simmering, stir in the heavy cream and let the soup cook for an additional 5 minutes.
  4. Ladle the hot soup into bowls and garnish with tortilla chips, fresh lime, and chopped cilantro.

Notes

For quicker prep, use shredded rotisserie chicken. Adjust spices to your taste preference.
