- 2 cups cooked chicken, shredded
- 4 cups chicken broth
- 1 can (14 oz) diced tomatoes
- 1 can (15 oz) black beans, drained and rinsed
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup heavy cream
- 1 cup tortilla chips
- Fresh lime wedges
- Fresh cilantro, chopped
Instructions
- In a large pot, heat a splash of oil over medium heat. Add the diced onion and minced garlic. Sauté for about 3-4 minutes until soft.
- Stir in the shredded chicken, diced tomatoes, black beans, chicken broth, cumin, chili powder, salt, and pepper. Bring to a boil, then reduce heat and let it simmer for 20 minutes.
- After simmering, stir in the heavy cream and let the soup cook for an additional 5 minutes.
- Ladle the hot soup into bowls and garnish with tortilla chips, fresh lime, and chopped cilantro.
Notes
For quicker prep, use shredded rotisserie chicken. Adjust spices to your taste preference.
