- 2 cups jasmine or basmati rice, rinsed and drained
- 1 pound boneless chicken breast, cut into bite-sized pieces
- 4 tablespoons unsalted butter, room temperature
- 4 cloves garlic, finely minced
- 1 cup chicken broth, preferably low-sodium
- 1 lemon, juiced and zested
- ½ cup heavy cream
- Fresh parsley, finely chopped
- Salt and freshly ground black pepper, to taste
Instructions
- Melt 2 tablespoons of butter in a large skillet over medium heat. Add chicken pieces, season with salt and pepper, and cook until golden brown and cooked through, about 5-7 minutes. Remove from skillet and set aside.
- In the same skillet, add the remaining 2 tablespoons of butter. Once melted, stir in minced garlic and sauté until fragrant, about 1 minute.
- Pour in chicken broth, scraping the bottom of the skillet to incorporate browned bits. Let simmer for 2-3 minutes.
- Stir in lemon juice, zest, and heavy cream, allowing to simmer gently until slightly thickened, around 3-4 minutes.
- Add rinsed rice and return cooked chicken to the skillet. Stir to combine and cover. Cook on low heat for about 15 minutes, until rice absorbs the liquid and is tender.
- Fluff the rice with a fork and adjust seasoning with salt and pepper as needed.
Notes
For added depth, consider deglazing the pan with a splash of white wine. Fresh herbs like thyme or oregano can enhance the flavor.
