- 1 cup coconut milk
- 2 teaspoons curry powder
- 1 teaspoon garlic paste
- 1 teaspoon ginger paste
- Fresh cilantro, chopped (optional)
Instructions
- In a large skillet, heat the cooking oil over medium heat. Add the chopped onions and salt. Cook for about 10-15 minutes, stirring occasionally, until the onions are caramelized and golden brown.
- Stir in the garlic paste and ginger paste. Cook for 1-2 minutes until fragrant.
- Pour in the coconut milk and stir well. Add the curry powder and simmer for about 5 minutes, allowing it to thicken slightly.
- If desired, use an immersion blender to blend the curry to your preferred consistency.
- Garnish with freshly chopped cilantro before serving.
