Description

Ingredients

  • 3 large onions, finely chopped
  • 2 tablespoons cooking oil
  • 1 teaspoon salt
  • 1 cup coconut milk
  • 2 teaspoons curry powder
  • 1 teaspoon garlic paste
  • 1 teaspoon ginger paste
  • Fresh cilantro, chopped (optional)

Instructions

  1. In a large skillet, heat the cooking oil over medium heat. Add the chopped onions and salt. Cook for about 10-15 minutes, stirring occasionally, until the onions are caramelized and golden brown.
  2. Stir in the garlic paste and ginger paste. Cook for 1-2 minutes until fragrant.
  3. Pour in the coconut milk and stir well. Add the curry powder and simmer for about 5 minutes, allowing it to thicken slightly.
  4. If desired, use an immersion blender to blend the curry to your preferred consistency.
  5. Garnish with freshly chopped cilantro before serving.
