- 2 cups cooked chicken, shredded
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup carrots, sliced
- 1 cup celery, chopped
- 1 cup cream or coconut milk
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Gather all ingredients for a smoother cooking process.
- In a crockpot, add the pumpkin puree, cooked shredded chicken, diced onion, minced garlic, chicken broth, sliced carrots, chopped celery, and dried thyme.
- Add salt and pepper to your preference and taste later to adjust if needed.
- Stir all ingredients well to combine.
- Cover the crockpot and cook on low for 360-480 minutes or on high for 180-240 minutes until the vegetables are tender.
- Once cooking is complete, stir in the cream or coconut milk and mix until well incorporated.
- Ladle the soup into bowls and serve warm.
Notes
Sauté onions and garlic first for deeper flavor. You can add spices like cumin or smoked paprika for more kick.
