Description

A cozy and satisfying meal combining creamy pumpkin sauce, tender gnocchi, spinach, and Italian sausage, perfect for fall.


Ingredients

  • 1 lb (450 g) potato gnocchi
  • 2 tablespoons olive oil
  • 8 oz (225 g) Italian sausage, casings removed
  • 1 cup pumpkin puree
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste
  • 2 cups fresh spinach leaves
  • Fresh parsley or basil for garnish (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add the gnocchi and cook according to the package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the Italian sausage and cook until browned, about 5-7 minutes. Remove and set aside.
  3. In the same skillet, sauté minced garlic for about 1 minute until fragrant.
  4. Lower the heat and add pumpkin puree, heavy cream, Parmesan cheese, nutmeg, salt, and pepper. Stir until creamy.
  5. Fold in the cooked gnocchi and spinach until combined.
  6. Add the sausage back to the skillet and mix until warm.
  7. Serve immediately, garnished with parsley or basil if desired.

Notes

Avoid overcooking the gnocchi to maintain their texture. For a richer sauce, you can increase heavy cream and cheese.
