A quick and delicious pasta sauce made with roasted tomatoes and garlic, perfect for busy weeknights.
Ingredients

- 2 cups cherry tomatoes
- 4 cloves garlic, unpeeled
- 1 cup ricotta cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Pasta of your choice (spaghetti, penne, or fusilli)
- Fresh basil leaves for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- On a baking sheet, toss cherry tomatoes and unpeeled garlic with olive oil, salt, and pepper.
- Roast in the oven for 20 to 25 minutes until tomatoes are blistered and garlic is soft.
- Remove roasted garlic from skins and blend with tomatoes and ricotta until smooth.
- Cook pasta according to package instructions.
- Toss cooked pasta with the creamy sauce and garnish with fresh basil leaves.
Notes
For extra indulgence, add freshly grated Parmesan cheese or a drizzle of olive oil. Store leftovers in an airtight container for up to three days.
