Description

A quick and delicious pasta sauce made with roasted tomatoes and garlic, perfect for busy weeknights.


Ingredients

Scale
  • 2 cups cherry tomatoes
  • 4 cloves garlic, unpeeled
  • 1 cup ricotta cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Pasta of your choice (spaghetti, penne, or fusilli)
  • Fresh basil leaves for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. On a baking sheet, toss cherry tomatoes and unpeeled garlic with olive oil, salt, and pepper.
  3. Roast in the oven for 20 to 25 minutes until tomatoes are blistered and garlic is soft.
  4. Remove roasted garlic from skins and blend with tomatoes and ricotta until smooth.
  5. Cook pasta according to package instructions.
  6. Toss cooked pasta with the creamy sauce and garnish with fresh basil leaves.

Notes

For extra indulgence, add freshly grated Parmesan cheese or a drizzle of olive oil. Store leftovers in an airtight container for up to three days.
