- 4 pieces boneless, skinless chicken breasts (about 1.5 pounds)
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1 cup uncooked rice
- 2 cups chicken broth
- 1 cup heavy cream
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1/2 teaspoon parsley (fresh or dried for garnish)
- 1 cup frozen peas (optional)
- 2 tablespoons olive oil
Instructions
- Rinse the uncooked rice under cold water until it runs clear.
- Prepare the rice according to the package instructions using chicken broth instead of water.
- In a large skillet over medium heat, heat the olive oil and sauté the diced onion for 2-3 minutes.
- Add minced garlic and cook for an additional minute.
- Season the chicken breasts with paprika, salt, black pepper, and thyme.
- Cook the seasoned chicken in the skillet for 5-6 minutes on each side until golden brown.
- Remove the chicken and set aside, then add heavy cream to the skillet.
- Stir the cream with the onion and garlic mixture and let it simmer.
- If using, add peas and heat through for 2-3 minutes.
- Return the chicken to the skillet and let it simmer for an additional 5 minutes.
- Serve the chicken over the cooked rice and garnish with parsley.
Notes
Add red pepper flakes for a spicier version. Brown rice can be used for a healthier option.
