- 4 pieces boneless, skinless chicken breasts (about 1.5 pounds)
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1 cup rice (uncooked)
- 2 cups chicken broth
- 1 cup heavy cream
- 1 medium onion (diced)
- 3 cloves garlic (minced)
- 1 cup frozen peas (optional)
- 2 tablespoons olive oil
- 1/2 teaspoon parsley (fresh or dried, for garnish)
Instructions
- Rinse the rice under cold water until the water is clear. Cook it according to package instructions, but use chicken broth instead of water.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 2-3 minutes until soft and translucent.
- Stir in the minced garlic and cook for another minute until fragrant.
- Sprinkle the chicken breasts with paprika, salt, black pepper, and thyme. Place the chicken in the skillet and cook for 5-6 minutes on each side until golden and cooked through (the internal temperature should be 165°F).
- After removing the chicken, lower the heat and add heavy cream to the skillet. Stir gently, picking up all the flavorful bits from the bottom, and let it simmer lightly.
- If using, add the frozen peas to the sauce and cook for another 2-3 minutes until warmed through.
- Return the chicken to the skillet, nestle it into the creamy sauce, and let it simmer together for about 5 minutes to blend the flavors.
- Spoon the creamy smothered chicken over the cooked rice and garnish with parsley if desired.

This dish is great for reheating leftovers, and feel free to add other vegetables like bell peppers or carrots for extra flavor.
