- 2 cups mixed vegetables (carrots, peas, potatoes)

Instructions
- Heat a splash of olive oil in a large pot over medium heat.
- Add diced onion and minced garlic, stirring until the onion is softened and translucent.
- Pour in the vegetable broth and bring it to a boil.
- Once boiling, add the mixed vegetables and lower the heat to let them simmer until tender.
- Stir in the heavy cream, seasoning the soup with salt and pepper to taste.
- For a smoother texture, blend the soup until creamy.
- Ladle the soup into bowls and garnish with fresh herbs if desired. Serve hot.
Notes
