Description

A warm and comforting creamy soup loaded with mixed vegetables and rich flavors.


Ingredients

  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 cups vegetable broth
  • 2 cups heavy cream
  • 2 cups mixed vegetables (carrots, peas, potatoes)
  • Salt and pepper to taste
  • Olive oil
  • Fresh herbs (optional, for garnish)

Instructions

  1. Heat a splash of olive oil in a large pot over medium heat.
  2. Add diced onion and minced garlic, stirring until the onion is softened and translucent.
  3. Pour in the vegetable broth and bring it to a boil.
  4. Once boiling, add the mixed vegetables and lower the heat to let them simmer until tender.
  5. Stir in the heavy cream, seasoning the soup with salt and pepper to taste.
  6. For a smoother texture, blend the soup until creamy.
  7. Ladle the soup into bowls and garnish with fresh herbs if desired. Serve hot.

Notes

Store leftover soup in an airtight container in the refrigerator for up to 3-4 days. Can be frozen for up to 3 months.
